A flavorful Vietnamese dish made with stuffed fried tofu and tomatoes, complemented with a savory meat filling of ground pork, garlic, and shallots, simmered in a delicious sauce.

What you need

tbsp fish sauce

lb ground pork

tbsp cooking oil

tbsp sugar

clove garlic

shallot

tsp black pepper

roma tomato
fresh tomatoes

oz tofu
Instructions
1: Combine all the ingredients listed 'for the filling' in a small bowl and set aside. 2: Cut and remove the core of the 2 large tomatoes. Dice the core and combine with the diced Roma tomatoes - set aside. 3: Stuff the 2 large tomatoes and fried tofu with the meat filling. Set aside. 4: In a large pan, heat 6 tbsp cooking oil over medium-high heat. Once hot, shallow fry your stuffed tomato and tofu (meat side down first) until lightly brown. Remove and set aside. 5: In the same large pan with excess oil from the shallow frying, add the minced garlic and shallots. Sauté for 30 seconds. 6: Add your diced tomatoes and sauté for another minute. 7: Add 1 cup of water and your seasonings: fish sauce, sugar, MSG. Then add back your fried tomato and tofu. 8: Cover and allow to simmer for 20 minutes. 9: After 20 minutes, take off the lid and allow to simmer for 5 minutes. 10: Garnish with green onions and serve with rice.View original recipe
